Week 1 Breakfasts

With the Fit Girl’s Guide, the breakfasts for week 1 are overnight fridge oats. I used to make something like this when I lived in Maryland. What’s super great about this is that you can prep 3 days of breakfasts in one evening. It’s a grab and go breakfast, which is my favorite!

Still on the Paleo Diet…

Last night I worked out with my trainer again!  I just love working out with my trainer.  I’m not sure if he knows that since he’ll ask me how I’m doing (during a set/exercise/whatever) and I’ll often answer with an expletive, but that’s just because he makes me do hard stuff…which is good for me!  We (and when I saw we, I mean ‘I’) were doing sprints on the treadmill for .1 miles and I actually ran at 7 mph!  I’m not sure if that’s the fastest I’ve ever run, but it’s certainly the fastest I’ve ever run on treadmill.  One of my favorite things about my trainer is that he leaves some time at the end of each session so he can stretch me.  Last night he told me that I’m one of a few of his clients that works hard enough during the workout that I burn enough calories for a full 10 minutes of stretching.  That made me so proud!  I do work really hard when I work out with him.  So, my session last night was pretty awesome.

I’m continuing with the Paleo Diet.  Last night I was going to make Spiced Chicken with Peaches and Pineapple Sauce.  About halfway through making it (with fresh-squeezed orange juice!), I realized I’m not supposed to have sugar that late.  While it was simmering I sautéed some onions and made some lettuce wraps with onions, tomato, and avocado.  It actually wasn’t bad.  I didn’t have my camera with me, so I took a picture with my phone.  There were four wraps and they weren’t too bad.  I would probably jazz them up a little more if I had more time to think about it.

I finished making the chicken dish and it smelled delicious!  I realized that with all the fruit in it, it would make a great breakfast.  I sometimes forget that the Pancake Police won’t come and arrest me if I don’t have cereal in the morning.  It split up nicely into three servings.  I had one this morning and it was a great way to start my day!

Oh!  And today is also Bike & Walk to Work Day, so I biked in 🙂  I’m very pleased with myself.  I figured my bike in should be leisurely, so I’m not too sweaty when I get to work, and then I can get in a work out when I bike home!  I brought my clothes into work yesterday so I didn’t have to take them today.  If I had really been planning, I would have made a lunch for today too.  This is something I can actually see myself doing, I just have to plan for it.  Perhaps I’ll plan next week.
